125 grams of flour.

1/2 teaspoon salt.

2 eggs. |
300 ml milk. |
80 ml of cream with low fat content.

Butter to grease the frying pan.

Lamb’s lettuce and rocket.

Put the flour and salt in a bowl and mix. Add the eggs one at a time, beating until the first one is well blended before adding the second. Finally add the milk little by little, and finally the cream.

The mixture should be smooth and free of lumps. Leave to stand covered with a cloth in a warm place.

Grease the frying pan or crepe pan and put it on the heat. Once hot, add a measure of the batter and spread it on the bottom of the pan, moving it with a little twist of the wrist. Do not put too much batter, the crêpe must be very thin.

When bubbles start to come out of the batter, carefully turn it over and let it brown on the other side.

Remove the crêpe and repeat the operation with all the dough. Grease as necessary.

Fill with lamb’s lettuce, rocket and GoodJamón.
|
Add a little extra virgin olive oil to the lettuce.
